QUICK TURKEY HOMINY CHILI

Introduction

Ingredients

    2 T lard or drippings
    1/2 c chopped green pepper
    1 small onion, chopped (50 g)
    2 T chili powder
    2 c canned tomatoes, undrained (Mexican style would be good)
    3 c (one can) Juanita's Mexican Style Hominy, drained and rinsed
    1 c chicken broth
    2 c diced cooked turkey (or chicken)
    1/2 t salt
    1/2 crushed red pepper
    4 oz shredded Cheddar cheese

Directions

Saute onion and pepper in the lard. Add the chili powder and saute another minute or so. Stir in everything else except the cheese. Bring to a boil over high heat, reduce heat, and simmer 10 minutes, stirring occasionally. Serve in 4 bowls, topping each bowl with 1 oz of shredded cheddar. If not eating immediately, wait until it will be eaten to add the cheese.
