Submitted by: BRIGITTE471

Introduction

comfort food at its best comfort food at its best
Number of Servings: 14

Ingredients

    3 cups dried black beans
1 can Casa Mamita tomatoes with green chillis (aldi)
1 can chicken broth (aldi) or vegie broth
    1 onion diced
    1 green pepper diced
2 - 3 stalks celery diced (or you can just cut in half if you just want to use them for flavor and not eat them)
1 half package of Parkview beef smoke sausage diced (you can also use the pork kind if you eat pork or no meat at all if you are a vegitarian)
about 2 to 3 cups water
    1 tbsp of minced garlic
onion powder and salt to taste
for those that really like spicy you can add one fresh jalapeno pepper diced

Tips

this recipe works well with any beans and you can substitute the meat or just leave it out altogether
dry beans are better for less sodium you can also do a quick soak on the beans by putting them in a post of cold water just enough to cover then boil for 1 hour rinse and let sit for 30 minutes then cook as directed

Directions

soak beans overnight to make them tender rinse well then combine all ingredients into a large pot cover and bring to boil for about 20 minutes stirring to keep from sticking then reduce heat and simmer for about 1 and half to 2 hours the liquid will thicken a bit you can eat with rice or plain.
I eat plain to reduce calories
hope you enjoy

Serving Size: 1 cup this will make about 14 servings
