betsi's mushroom soup

Number of Servings: 4

Ingredients

    1 head cauliflower, chopped
    1 cup almond breeze
    2 cups low sodium vegetable broth
    1 Tbsp granulated onion powder
    1/2 tsp salt
    tsp pepper
    tsp kelp
    1 tsp olive oil
    3 cups diced mushrooms
    1 whole medium yellow onion, chopped

Directions

Frying pan: Saute onions in olive oil until clear. Add mushrooms and saute.

Soup pot: Cook rest of ingredients until cauliflower is soft. Add sauteed vegetables. Blenderize. Serve!

Serving Size: makes 4 - 2 cup servings
