Venison Meat Loaf

    2 eggs
    1 lb. ground venison
    2 cups stewed tomatoes, pureed and divided
    1 cup dry bread crumbs
    1/2 cup chopped onions
    1/2 tsp. ground sage
    1/2 tsp. black pepper
    1/2 tsp. Sriracha sauce
    1 tsp worcestershire sauce
    2 Tbls. vinegar
    2 tsp. dijon mustard
    1/2 cup brown sugar


Preheat oven to 350 degrees. In mixing bowl, beat 2 eggs. Add 1 cup pureed stewed tomatoes, bread crumbs, ground venison, sage, chopped onions and black pepper. Mix together well. Shape into loaf in loaf pan. Put in preheated oven and cook for 30 minutes. While meatloaf cooks, mix together in a saucepan the remaining pureed stewed tomatoes, sriracha sauce, worcestershire sauce, vinegar, dijon mustard and brown sugar. Simmer for about 10 minutes. Pour over meat loaf in oven. Let meat loaf cook in oven another 30-45 minutes until done.
