Mediterranean Vegetables and Chicken

Ingredients

    1.5 lb boneless skinless chicken, cut in strips
    3 Tbsp olive oil, divided
    4 garlic cloves, diced and divided
    1 medium onion, sliced
    2 bell peppers (I did 1 green & 1 red), cut into thin strips
    1 zucchini, quartered slices
    2 14.5oz cans of diced tomatoes
    Basil, dry or fresh - season to taste
    1/2 - 1 cups spinach leaves, cut in strips
    Approx. 20 black olives, sliced
    1 Tbsp capers, drained

Directions

Heat 1 Tbsp of olive oil in large skillet. Add chicken and cook through. Remove chicken from skillet and set aside.

Put 2 Tbsp olive oil and half of the diced garlic in the same skillet. Cook on medium heat for 1 min.

Add onion, peppers, and zucchini. Saute for 1-2 min.

Stir in tomates and basil. Simmer for about 6-8 min until vegetables are tender.

Stir in rest of garlic, spinach, black olives, and capers. Simmer for 2-4 min.

Return chicken to the skillet and cook for 5 mins or until heated through.

Serve over egg noodles.
