Mediterranean Chicken Orzo Salad

Introduction

Please use ingredients listed below--SP did not have everything in their bank of ingredients, so I made close substitutions. Please use ingredients listed below--SP did not have everything in their bank of ingredients, so I made close substitutions.
Number of Servings: 10

Ingredients

    3 cups cooked chicken breast
    1 cup halved cherry tomatoes
    1/2 cup pitted kalamata olives, chopped
    1-1/2 TBSP capers, rinsed and drained
    1 6-oz jar marinated artichokes
    1 cup orzo
    6 TBSP olive oil
    3 TBSP tarragon vinegar
    1 TBSP fresh lemon juice
    1/2 TBSP Dijon mustard
    1 TBSP fresh tarragon, chopped
    salt and pepper

Directions

Cook the orzo per directions; rinse with cool water and drain. place in bowl with the chicken, tomatoes, olives, capers, and artichokes. Mix the rest of ingredients for dressing. Pour over and mix well. Refrigerate for at least an hour before serving--tastes better the longer it marinates!
