Bison Chili

Number of Servings: 8

Ingredients

    1 pound Extra lean ground bison
    1 medium onion, chopped
    1 medium red bell pepper, chopped
    2 medium stalks celery, chopped
    2 tbsp Chili powder,
    1 tbsp Cumin seed
    1 tsp Oregano

    1 can mushrooms
    1 can black beans
    1 can corn
    1 can Chili style beans
    1 can crushed tomatoes
    1/2 cup Tomato Sauce
    1/2 cup salsa

Directions

brown bison in pot for 1 minute
add onion, red pepper, celery and spices
cook until meat is no longer pink
add all other ingredients and bring to a boil
reduce heat, cover and simmer 30-45 mins until onions & peppers are soft.

Serves 8
