Curried Cauliflower with Chickpeas and Tomatoes

Ingredients

    2 T curry powder
    2 T ground ginger
    2 cups chopped onion
    14 oz can diced tomatoes
    4 cups frozen cauliflower
    2 cans chickpeas, drained and rinsed
    2 T tomato paste

Tips

Can substitute fresh ginger for ground, fresh cauliflower for frozen, and amounts are estimated.


Directions

Saute onion, curry powder and ginger until onion is soft. Add tomatoes and cook 6 minutes. Mix in cauliflower, chickpeas and tomato paste plus 1 cup water. Reduce heat, cover and simmer until cauliflower is tender, about 15 to 20 minutes. Uncover and cook until excess moisture is evaporated and cauliflower is coated with thick gravy. Season to taste.

Serving Size: makes 4 2-cup servings
