Gluten Free quick coffee cake

Number of Servings: 12

Ingredients

    1-3/4 Multi Purpose mix
    2 tsp baking powder 1/4 tsp salt 1/4 c butter
    1/3 c sugar
    1 egg 1 tsp vanilla
    1/4 c whole milk
    1/2 c reduced fat sour cream


    Topping:
    1 small apple, cored and sliced, on top of batter
    2 Tbl baking mix
    1/4 c packed brown sugar
    1 Tbl butter
    1 tsp cinnamon
    1/4 c chopped walnuts

Directions

375 oven.grease 9" cake pan. Blend baking mix, bp and salt, set aside. In large bowl mix butter, sugar, egg, & vanilla. Add milk and dry ingredients; blending well. Spread thick batter in pan. Add topping if desired.
Topping: 1 apple, cored and sliced. Arrange on top of batter. Mix 2 table baking mix, 1/4 c packed brown sugar, 1 Tbl butter, 1 tsp cinnamon. Blend, add 1/4 c chopped walnuts,sprinkle on top.
