wanted to do something different with the scallops and this is what i came up with. wanted to do something different with the scallops and this is what i came up with.
Number of Servings: 1


    4 large scallops
    1 cup of asparagus
    1 cup of mushrooms
    1 cup of zucchini
    1 cup of marinara sauce or your favorite
    3 cloves of garlic
    2 tbsp of olive oil
    crushed black pepper and sea salt for scallops
    crushed red pepper
    1/2 cup fat free mozzarella cheese


heat large pan up with olive oil and garlic.cook garlic slightly and when pan is hot place scallops in and cook for 1-2 minutes per side.just cook enough so they start to become opaque.remove scallops and add vegetables and 1 tbsp of olive oil.cook for about 4 or 5 minutes then add half of the sauce.while that is cooking cut the scallops up into small pieces and place in the pan with the remaining sauce.add as much crushed red pepper as you would like and put on low and let simmer for about 10 minutes.put a serving on a plate and add some mozzarella cheese.hope you enjoy it as much as i did.
