Ingredients

    juice pulp, 1.5 c.
    Applesauce, unsweetened, .5 cup
    Vanilla Extract, 1 tsp
    egg white, fresh, 2 large
    Whole Wheat Flour, 1.5 cup
    Baking Powder, .5 tsp
    Baking Soda, .5 tsp
    Salt, .5 tsp
    Cinnamon, ground, 1.5 tsp
    Nutmeg, ground, .5 tsp

Tips

1.5 c. grated carrots used to calculate nutrition values


Directions

Beat together applesauce and sugar, then add eggs, vanilla and juice pulp.

Sift dry ingredients and add to pulp mixture.

Bake in a greased muffin tins at 350F for 25 minutes.
