TaoDaddy's Hearty Egg Scramble

Introduction

Number of Servings: 2

Ingredients

    3/4 cup Egg Whites
    1/4 cup Egg Substitute
    3 Banquet Brown 'n Serve Turkey Sausage links, diced
    1/2 cup ham, diced
    1/2 red pepper, diced
    1/2 medium onion, diced
    4 oz baby portabello mushrooms, diced
    1 Tbsp flax seed
    1 tsp garlic salt
    1 Tbsp unsalted butter

Directions

1. Preheat a non-stick pan over medium high heat. Melt the butter in the pan.
2. Add the onion and cook for a couple minutes.
3. Add the red pepper and mushrooms. Cook for another 2 or 3 minutes.
4. Add the sausage and ham, cook for 4 or 5 minutes.
5. Pour in the eggs, flax seed, and garlic salt and cook, stirring constantly until the eggs are done.
6. Split into 2 equal portions and serve with whole wheat toast or English muffins and a banana.

Serving Size: Makes 2 hearty servings
