Stewed Chickpeas and Cauliflower

Ingredients

    Chickpeas (garbanzo beans), 3 cup
    Garlic, 3 cloves
    Onions, raw, 1 medium (2-1/2" dia), sliced or diced
    Olive Oil, 1 1tsp
    Curry powder, 1 tsp
    Oregano, ground, 1 tbsp
    Cumin seed, 1 tsp
    Cinnamon, ground, .5 tsp
    Canned Tomatoes, 2 can
    Cauliflower, raw, 4 cup
    Vegetable Broth, 3 cup
    Tomato Paste, .1 cup

Tips

You can top it with some feta cheese for a salty contrast to the stew.


Directions

If using dried chickpeas, soak overnight and then simmer in a pot of broth with a cinnamon stick or two for added flavor.

Soften onion and garlic in olive oil with a pinch of salt. Just before they begin to brown, add spices and then tomatoes (don't drain!), chickpeas, and broth. Let it all simmer together for at least 45 minutes, adding cauliflower about 20 minutes before serving.
