    2 tablespoons canola oil
    1 medium onion, chopped
    4 cups chicken broth
    2 teaspoons garlic powder
    3 tablespoons paprika
    salt & pepper to taste
    4 tablespoons margarine
    4 tablespoons flour
    2 cups cooked chicken thigh pieces
    1/4 cup sour cream


I like to serve it over mashed potatoes, but you can use noodles or even rice.

In a large sauce pan, fry onion in canola oil until soft. Add chicken broth, garlic, paprika, salt and pepper. Heat just until boiling. In a small pan, melt margarine. Whisk in flour and heat through for a minute or two. Slowly whisk in about 1 cup of the broth mixture. Add the flour mixture to the broth, whisking it in. Heat over medium until it begins to thicken. Stir in chicken thigh pieces and sour cream, heat through for about a minute.

Serving Size: Makes 6, 1-cup servings
