    1/2 cup chopped bell pepper, multiple colors
    1/3 cup chopped summer squash and zucchini
    3/4 cup fresh spinach
    1/2 cup shredded cheddar cheese
    1 Tbsp Olive Oil
    2 Eggs, beaten

Heat olive oil in a large frying pan, add veggies and spinach. Steam for 3-5 min. Pour beaten eggs evenly over bottom of a pan, cook until egg is cooked, about a minute or two. Layer cheese and then veggie mixture on egg. Fold over and let sit until cheese is melted. Makes 1 serving.
