Wolfganng Puck Pizza crust

Ingredients

1 package active dry or fresh yeast
1 tsp honey
1 cup warm water (105F-115F)
3 cups all purpose flour
1 tsp salt
1 tbsp extra virgin olive oil
Pizza topping of choice
(nutritional values for crust only)
Directions
In a small bowl, dissolve years in 1/4 cup warm ater with the honey, set aside for a few minutes
In a stand mixer put the flour and salt followed by olive oil, 3/4 cup water and the years mixture. beat for about 5 minutes.
On a clean, floured surface turn the dough by hand for about 2-3 more minutes.
Place the dough in a warm place in a lightly greased bowl (I use spray extra virgin olive oil) and cover with a damp cloth for a half hour.
divide the dough into 4 equal portions of about 6 oz and roll into balls. Turn the dough for another 2-3 minutes and let rise again for about 20 minutes.
Ple heat over to 500 with a baking stone (a cookie sheet works just will not be as crispy)
Roll the balls out in to circles or squares on a floured surface (use a rolling pin works great for this as well) what ever is your pereferance. add toppings and place in oven. Cook for about 10-12 minutes or untill done for4 your taste.
