Golden Quinoa Muffins

Introduction

Vegetarian whole grain muffins. Can substitute up to 1/8 cup of quinoa for flax seed. Can substitute raisins for another dried fruit, chop if needed. Number of Servings: 18

Ingredients

    1 cup quinoa (pre-rinsed)
    1 1/2 cup boiling water
    1 cup fine ground cornmeal
    1/2 cup raisins (or other dried fruit)
    1/4 cup honey
    1/4 cup sugar
    1/3 cup vegetable oil
    1 large egg
    1 tbsp orange zest
    1 tsp cinnamon
    1/2 tsp salt substitute
    1 cup whole wheat flour (preferably pastry flour)
    2 tsp reduced sodium baking powder

Directions

In bowl, pour boiling water over quinoa, cornmeal, raisins. Stir, cover, let sit 1 hour. (Can sit in fridge up to 8 hours.) Resulting mix will be thick.

Preheat oven to 375*, oil muffin tins & set aside.

Into the quinoa mixture, stir remaining ingredients. Add more water if needed and be careful not to over mix. Spoon into muffin tins and bake for 30 minutes or until lightly browned.

Serving Size: Makes 18 muffins

  • this appears to be the recipe off the side of Bob's Red Mill Organic Quinoa container. I'm looking forward to making this later today and I was hoping that some one had already figured out the nutritional values since that isn't on the container. So Thank you! - 4/20/13
