Introduction

I used up some left over pot roast beef and whatever veg I could find in the fridge. Turned out pretty good, I'll freeze servings and take it for lunch. Number of Servings: 7

Ingredients

    10 c beef stock
    2 c chopped onion
    1 c chopped carrots
    2 c chopped celery
    2 c chopped cabbage
    1 c frozen peas
    3 c cubed cooked roast beef (519 g.)
    6 T roasted red peppers
    2 Knorr beef stock/bouillon

Directions

Throw everything together and simmer til veg are tender. Salt, pepper, thyme and a little garlic powder to taste

Serving Size: makes 7 2-c servings
