*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup (remove)
Cheddar or Colby Cheese, Low Fat, 1.25 cup, shredded (remove)
Breakstone's 2% Milkfat Small Curd Lowfat Cottage Cheese, 4 oz (remove)
Egg, fresh, 3 large (remove)
Carrots, raw, 1 large (7-1/4" to 8-1/2" long) (remove)
Green onions .25 cup, chopped (remove)
*Cumin , ground 1tsp (remove)
Garlic powder, .5 tbsp (remove)
Salt and pepper based on preference
In a large bowl, combine quinoa, veggies, and the rest of the ingredients and mix well.
Scoop mixture into muffin tin and cook for 20 minutes at 350 degrees.
Let cool before eating.
Serving Size: Makes 12 muffins.
