Gluten Free Vegan Pancakes

Introduction

We aren't a vegan family but we do have a daughter who has to eat GF and I am trying to get my family to eat less animal products in general. I found the original recipe at picklesnhoney.com and tweeked it a bit. Number of Servings: 12

Ingredients

    .5 cup Pamela's Baking & Pancake Mix
    .33 cup Rice Flour
    .33 cup Sorghum Flour
    .33 cup Tapioca Starch
    1 T Baking Powder
    1 t salt, kosher
    .75 t Xantham Gum
    1.5 cups Almond Breeze, Vanilla, Unsweetened
    1 t pure vanilla extract
    1 T ground flax seed/flax meal
    3 T water
    1 T coconut oil

Directions

combine all ingredients together. Heat a skillet and coat with coconut oil to prevent sticking. Drop by .25 cup onto hot skillet, flip when the top begins to set a bit. Continue cooking until cooked through.
