Corn and Broccoli Stew

Ingredients

1 small yellow onion, chopped
1 large red potato, cubed
1/2 2% milk
1/8 teaspoon black pepper
3 cups broccoli florets
1 1/4 fresh or frozen whole-kernel corn
Tips
The original recipe called for 1 slice of bacon, chopped. It was removed to make it veggie, but you can add it back in for flavor if you like.
Directions
Cook onion, covered, over moderately low heat fr five minutes in a splash of olive oil over moderately low heat for five minutes.
Add the potato, 1/4 cup f the milk, and the pepper. Cover and cook until the potato is almost tender, about 7 minutes. Add the broccoli and the remaining 1/4 cup milk and cook, uncovered, five minutes longer. Add the corn and cook for 3 minutes or until it is heated through.
Serving Size: Make 4 servings
