Food Storage - Vegetable Beef Soup

Introduction

Full of 14 vegetables, this is my favorite food storage recipe. It's perfect for emergencies, camping or anytime you want a meal healthy 'just-add-water' meal. Freeze dried foods can last for 10+ more years on the shelf. I normally follow sales to pick up the other freeze dried ingredients from North Bay Trading Co., Honeyville Grain or Emergency Essentials. I have found their products to be high quality, and they offer a selection of organic foods.

Of course, you can also make this with fresh ingredients, or a mix of the two (i.e., use home cooked beef stock instead of stock power)

This last batch I use Beef Broth instead of water to heat it up with. It was great.

Number of Servings: 12

Ingredients

    1 cup Honeyville Freeze Dried Ground Beef
    1/2 cup Onions chopped
    1/2 cup Celery diced
    1/2 cup Green Peas
    1/2 cup Broccoli chopped
    1 cup Carrots slices
    2 cups Red Ripe Tomatoes chopped (or canned)
    4 Tbs Harmony House - Tomato Powder
    1/2 cup Sweet Corn
    1 cup Potato diced
    1/2 cup Cabbage shredded
    1/2 cup Okra sliced
    1 cup Lima Beans
    1 tsp. Celery Salt
    2 Bay Leaves
    1 tsp. Garlic Powder
    1/4 tsp. Seasoning - Lawry's Seasoned Salt
    1/4 tsp. Black Pepper
    3 Tbs Beef bouillon cubes
    1Tbs Lea & Perrins Original Worcestershire Sauce
    1 cup dry Barrilla Plus Pasta

    * 8 cups Beef Broth + 2 cups of water

    ** 2 additional cups of water depending on thickness.

Tips

* You can use all water and either tomato power or sauce for a more "tomatoey" or beef stock for a "beefier" taste.

** I like more broth and added the additional 2 cups of water.


Directions

Add all ingredients to a large sauce pot.
Bring to boil.
Reduce heat, cover, and simmier 30 minutes or until pasta is tender.

Serving Size: Makes 10-12 1 cup servings (Figured with 12, 1 cup servings)
