Broccoli Soup

Introduction

Low sodium, low fat Low sodium, low fat
Number of Servings: 8

Ingredients

    Broccoli flowerets
    yellow onion
    celery
    FF 1/2 and 1/2
    unsalted butter
    fresh parsley (optional)
    3-5 fresh garlic cloves
    ground black pepper
    salt to taste (optional)
    Progresso Low Sodium Chicken Broth
    6 T Flour

Tips

I have also made this soup with carrots added and it gives a sweeter taste.

Directions

In a dutch oven, saute garlic and onion in butter. When translucent, add 6 T flour till smooth, add broth slowly, when all mixed add celery and broccoli. Cook till broccoli is tender then add 2 Cups 1/2 and 1/2 add fresh parsley, salt (if desired) and pepper and simmer for about 3-5 min. Then put entire soup through blender (slowly) and serve.
