Disappearing Oatmeal Cookies

Introduction

Ingredients

    1 C butter or margarine, softened
    1 C firmly packed brown sugar
    1/2 C granulated sugar
    2 large eggs
    1 tsp. vanilla
    1 and 1/2 C all-purpose flour
    1 tsp baking soda (level)
    1 tsp cinnamon (heaping)
    1/2 tsp salt optional
    3 C quaker oats
    1 C raisins

Directions

Heat oven to 350, unless you are using regular oats, in which case don't heat oven yet. Cream butter and sugars until smooth. Add eggs and vanilla - mix well. Add combined flour, soda, salt, and cinnamon. Mix until all dry ingredients are moistened. Add oats and raisins, mix in evenly. If you are using Quaker regular oats, let mixture rest for at least an hour, to allow oats to soften. Drop onto non-stick or greased cookie sheet by rounded tablespoonfuls, 3 inches apart. Bake 15 minutes, or until bottom edge is just browning and top is smooth, springy, and dry. Remove - for maximum chewiness, loosen on pan but do not transfer to rack - allow to cool on pan or on a plate.
