Ingredients

2 tbsp vegetable oil
1 large onion, chopped
1 1/2 lbs boneless chicken breasts, chopped into 1 inch pieces
5 cups water
4 medium celery stalks, chopped
1/2 cup frozen kernel corn
1 28 oz can of diced tomatoes
1/3 cup pearl barley
1/2 tsp salt
1 tsp dried thyme
1 tsp dried marjoram
1/2 tsp black pepper
1/4 cup minced parsley
Tips
If you like spice, add some cayenne.
This freezes very well, which means you can always get some nutrients into you even when you're too sick or tired to make anything.
Easy to hand off too when it's frozen to family, friends, and neighbors.
Directions
Heat oil in large pot. Add celery and onion to pot, cook until tender, about 4 minutes. Add all other ingredients except parsley.
Cover and simmer about 1 1/2 hours, then stir in parsley and serve.
