Quick and Easy Chocolate Chip Gluten Free Cookies

Introduction

An amazingly simple gluten free chocolate chip cookies!!! An amazingly simple gluten free chocolate chip cookies!!!
Number of Servings: 24

Ingredients

    1/3 c coconut oil
    1 cup packed brown sugar
    2 tsp salt
    1 cup extra smooth white rice flour
    1/2 c + 1 Tbsp tapioca flour
    1 tsp baking powder
    1/4 c + 2 Tbsp water
    1 c allergy-safe semisweet chocolate chips

Tips

A cool baking sheet works best as they don't cool too fast.


Directions

1. Preheat oven to 350 degrees F.
2. In a mixer, cream together oil, brown sugar, vanilla, and salt. Add the flours and baking powder then mix on slow speed. Once mixed, add water slowly until the dough is smooth. Let sit 30 min. Stir in chocolate chips.
3. Using a small ice cream scoop or tablespoon, drop onto a baking sheet, spacing the cookies about 2 in apart (about 6 cookies per baking sheet).
4. Bake for 12 minutes. Let cool on baking sheet for less than 1 minute. Remove with flat spatula/flipper and place on flat surface to cool completely!
