Introduction

This came from one of the ladies at my mom's book club. Do not be fooled by the name - this is delicious.

The first time I made this, the 3 guys I was living with were sneaking so many tastes that at the end of the 2 hour cooking time there was only half left!

Number of Servings: 8

Ingredients

    1 1/2 lbs lean ground beef
    1 medium onion, finely chopped
    1 28 oz can diced tomatoes
    2 cups water
    3 10 oz (284 ml) cans of consomme
    1 10 oz (284 ml) can tomato soup
    4 carrots finely chopped
    1 bay leaf
    3 celery stalks, finely chopped
    Parsley
    1/2 tsp thyme
    Pepper to taste
    1/2 cup barley

Freezes really well.

Directions

Brown meat and onions. Drain well. Combine all ingredients in large pot. Simmer, covered, a minimum of 2 hours.
