Chicken Breast - 1 pound, cooked and shredded
Brown rice - 1 cup cooked
Canned Tomatoes, 1 can
Campbells Cheddar Cheese, 1.25 cup (whole can)
Salsa, .5 cup (use more if needed to cover bottom of dish)
Corn Tortillas, 9 tortillas
Cheddar Cheese, 1 cup, shredded
Red Ripe Tomatoes, 6 slices, medium (1/4" thick)
*Lawry's Taco Seasoning, 1 packet
Delish with sour cream toppings and fresh chopped cilantro.
Heat a large skillet on medium heat and add shredded chicken with taco seasonings and diced tomatoes. Add water if needed per the taco packets directions. Cook to combine, about 5 minutes.
Using a 13 x 9 baking dish, add salsa to cover bottom. Then place 3 tortillas down over salsa. Add half the chicken taco mixture and then place three more tortillas down. Spread the cheddar cheese soup and then add the brown rice. Add last three tortillas, add the remaining chicken mixture to cover the tortillas. Add the shredded cheese to the top and place tomato slices over cheese. Bake in over for 30 minutes at 400 degrees. Let sit for 5 minutes before serving.
