Thai Red Curry Noodle Soup with Chicken

Ingredients

    Salt
    Vegetable oil
    Thai red curry paste (2T)
    Chicken broth
    Fish sauce
    Splenda (2T)
    Lime juice (2T)
    Chicken breasts
    Shirataki noodles
    Handful cilantro or basil
    Handful sliced scallions

Directions

Heat oil in saucepan over medium-high heat until shimmering. Add curry paste and cook until fragrant and sizzling, about 1 minute. Whisk in broth, fish sauce, Splenda, and lime juice.

Allow mixture to come to a simmer and cook until chicken is cooked through, about 10 minutes. Transfer chicken to a bowl and tear into bite-sized pieces.
