Turkey Sausage Spinach Breakfast

Introduction

Ingredients

    1/2 cup shredded potatoes
    1 large egg, beaten
    1 egg white, beaten
    1/4 cup spinach
    1/8 cup ground turkey sausage
    Dash of dill, salt, pepper
    1/2 clove garlic

Directions

Heat griddle to 375 degrees. Put 1/2 cup shredded potatoes in a bowl (thaw if you are using frozen). MIx in 1 large egg and one egg white and 1/4 cup thawed chopped spinach. Add 1/8 cup ground turkey sausage (I browned in the skillet and then cooked on remaining grease so no oil was used). Add 1/2 clove garlic and a dash of dill weed, salt and pepper to taste. Mix together. Pour onto griddle. Can separate into 2 "pancakes" about 1/4 inch thick. Turn after one side is brown. Brown and heat through on other side.
