very lemony chicken scampi

Ingredients

    1 tblsp. margarine spread
    2 6-oz. boneless, skinless chicken breasts, cut into large chunks
    1 onion, chopped
    1 green pepper, chopped
    1 red pepper, chopped
    6 mushrooms, sliced
    1 tsp. each: oregano, lemon pepper, seasoned salt, garlic powder, and parsley flakes
    1/2 cup white wine
    2 cups chicken broth
    zest of 1 lemon
    juice of 1 lemon
    1/2 cup brocolli tops

Tips

if lemon pepper has added salt, omit any salt and use low-sodium chicken broth.


Directions

Melt margarine over medium heat in a non-stick pan. Add cut up chicken pieces and saute on all sides until lightly browned. Add onion, peppers, and mushrooms. Add seasonings and cook until vegetables soften. Add wine and broth; bring to boil and cook 1 minute. Turn heat to simmer and add lemon zest and juice.Stir in brocolli. Cook, covered, for 10 minutes, until chicken is cooked through.
