Minestrone with spinach and black Beans

Ingredients

    1 tbsp O Extra Virgin Olive Oil
    1/2 cup chopped Onions
    2 cloves Garlic
    2tbsp Tomato paste, 2 tbsp
    1 lb fresh spinach coursely chopped
    1 1/2 tsp Thyme, ground
    1 1/2 Pepper, red or cayenne
    3 cups Safeway black Beans (soaked and cooked)
    3.5 cups fresh diced tomatoes
    4 cups water
    1/4 cup Kraft reduced fat Parmesan Cheese
    1/4 tsp no sault substitute
    1/8 tsp Black pepper

Tips


Directions

1. In a large saucepan, heat oil over mediom heat. Add onion and garlic, season with salt and pepper. Cook, stirring until onions soften (6-8 minutes).Add tomato paste and cook while stirring. Then add spinach, thyme, and red crushed pepper. Cook till 2-4 minutes.
2.Place 1/4 cup of beans in a bowl. Mash them and add them with other beans to mixture. Add 4 cups of water and bring to a boil. cook 10-15 minutes. Sprinkle with parmesan cheee is optional but included in my recipie.
