Fresh Pea Soup (adapted from Barefoot Contessa)

Introduction

Ina has creme fraiche in the soup I swapped it for yogurt
she also uses 2 tbsp butter for the leeks and onions
I used 1 Tbsp oil.

Number of Servings: 6

Ingredients

    4 cups chicken broth unsalted
    2 Leeks chopped and washed.
    1 cup chopped Onion
    4 fresh mint leaves choppe
    .5 tsp pepper
    dash of salt
    2 10ox packages of green peas or 5 cups fresh shelled peas.
    1 Tbsp olive oil
    .5 cup fat free yogurt

Directions

heat oil in large pan or pot add the chopped onions and leeks cook until soft about 10 minutes.
Add the chicken stock increase heat to high bring to a boil. Add the peas and cook until tender 3 - 5 minutes.
Remove from heat add the chopped mint , salt and pepper.
Puree the soup in batches in a blender.
Whisk in the yogurt, and serve.

Serving Size: makes 6 servings at 1.5 cups
