Ingredients

4 6oz. Haddock Fillets
1/4 cup lemon juice
1 Sliced Tomato
1 Cup Bell Pepper Slices
1/2 Cup Onion Slices
1 Cup Fresh Spinach
2 Tbsp Minced Garlic
Pinch of Salt and Pepper
Tin Foil

Directions
Preheat oven to 400 degrees F
Lay 4 good sized pieces of tin foil out (large enough to contain the fish when folded).
Place 1/4 cup fresh spinach on each of the pieces of foil.
Place the haddock fillets on top of the spinach and sprinkle with salt, pepper and the lemon juice.
Spread 1/2 tbsp of garlic on each then top with a couple slices each of tomato, pepper and onion.
Fold the foil up into pouches.
Bake for 20 minutes or until cooked through.
Let sit to cool the foil for 5 minutes before unwrapping.
Enjoy!
