Broccoli and Tomato Stew

Ingredients

    Sunflower Oil, 1 tbsp
    Onions, raw, 143 grams
    *Peppers, sweet, red, fresh, 0.5 medium (approx 2-3/4" long, 2-1/2"
    Broccoli, fresh, 141 grams
    Red Wine, 1 fl oz
    Peas, frozen, 54 grams
    Salt, 1 tsp
    Smoked Paprika, 1 tsp
    Oregano, ground, 1 tsp
    Parsley, dried, 2 tsp
    Canned Tomatoes, 1 can

Directions

Fry onions until golden. Add peppers and fry for a further 2 mins. Add broccoli (chopped into chunks) and the wine (you may also need to add some water). Simmer with a lid on so broccoli begins to soften. Add spices and salt. Keep simmering until broccoli cooked. Add tomatoes and simmer until the flavours have had time to develop. Serve with rice or grains.
