Number of Servings: 10

Ingredients

    10 cups Chicken Broth, low sodium
    1 Medium Onion, diced
    2 stalks celery, diced
    1 cup sliced baby carrots
    1 cup corn kernels
    1 cup green beans
    1/2 lb baby carrots
    1 medium yellow squash, quartered and sliced
    1 medium zuccini, quartered and sliced
    2 cups chopped fresh spinach
    2 cloves garlic, minced.
    2 tbl herbs de provence

Directions

Dice vegetables, place in large dutch oven, crock pot or large pot. Cover with 10 cups of broth. Can substitute Vegetable broth for chicken broth. Add in the herbs and simmer for 3 hours or until potatoes are soft.
