Oat Bran Pancakes

Ingredients

    1 C Oat Bran - organic
    2/3 C Almond Milk (soy milk, rice milk, or water)
    1T canola oil
    1 T honey
    3 T egg substitute
    1/4 C pecans chopped

Tips

Delicious with syrup - I serve it with frozen strawberries (any berry will do) sweetened with just a bit of Truvia - allow berries to come to room temperature before serving

Directions

Stir all ingredients until lumps disappear, don't overstir
Let batter sit for a couple of minutes
Cook on preheated (375-400 degree) griddle
Use 1/4 C batter for each pancake
Turn when bubbles form on surface and edges begin to dry

Serving Size: Makes 8 5" pancakes - 4 pancakes per serving
