Introduction

This more or less the recipe for hubby's "special potato soup". He's kind of a throw it all in a pot without measuring guy, so I've done the best I could for quantities but you'll have to adapt for your own taste. He's kind of a throw it all in a pot without measuring guy, so I've done the best I could for quantities but you'll have to adapt for your own taste.
Number of Servings: 12

Ingredients

    -6 medium potatoes - peeled and cubed
    -bacon - ham is good too. We usually use Hormel brand "real crumbled bacon" from the salad fixings aisle. About half the package which should be about 1/2 cup or 8 TBSP
    -6-8 cups of prepared bouillon or chicken broth. Bouillon is really salty so low sodium broth is better but we don't usually have any on hand.
    -1 quart (4 cups) fat free half and half
    -3/4 cup instant mashed potato flakes

Tips

Add a little pepper jack cheese to each serving and it adds just a touch of heat that makes the soup even better.


Directions

1. Cook the cubed potatoes in broth until they are tender.
2. Add in bacon bits and fat free half and half
3. Stir in potato flakes to thicken


Serving Size: 12-1 cup servings (approximately)
