Low Fat Mac!

Introduction

Lower Fat, Lower Carb Version of the All Time Comfort Food! Lower Fat, Lower Carb Version of the All Time Comfort Food!
Number of Servings: 4

Ingredients

    6 oz. Uncooked Whole Wheat Pasta
    1/4 C. Fat Free Plain Greek Yogurt
    6 oz. (or 12 Tbsp.) Fat Free Evaporated Milk
    4 oz. Low Fat Cheddar Cheese, Shredded
    1/2 Tbsp. (or 1 1/2 tsp.) Dijon Mustard
    Dash Salt
    Dash Pepper
    1 Tbsp. Dried Bread Crumbs
    1 Tbs. Grated Parmesan Cheese

Tips

Greek Yogurt is a lower calorie, lower fat, lower carb alternative for sour cream. You can use sour cream instead, but note that the nutrition information will change.


Directions

1) Preheat Oven to 350*

2) Cook Pasta According to Package Directions. Drain and transfer to a large bowl. While pasta is still hot, stir in Greek Yogurt and set aside.

3) Heat milk in a small saucepan over medium heat until tiny bubbles appear just around the edges (known as scalding).

4) Reduce heat to low. Add cheese and simmer until cheese melts, stirring constantly with a whisk, about 2 minutes.

5) Remove from heat and stir in mustard, salt and pepper.

6) Add cheese mixture to pasta mixture and mix well. Transfer to a small casserole dish, or 4 individual ramekins.

7) Combine bread crumbs and Parmesan cheese, sprinkle over pasta.

8) Bake until top is golden, about 30 minutes.

Yields 4 one cup servings.

Serving Size: Makes 4 Servings, Approx. 1 Cup Each
