Foil Baked Salmons with Basil Pesto and Tomatoes

Introduction

A fabulous and easy fresh salmon main course. I used Kirkland brand basil pesto .. so it was easy and only 15 minutes to the table. Ingredients

    2 Fillets of fresh or frozen salmon (apx 6 oz each)
    1/4 C basil pesto (or more to taste, but will change the calorie count)
    3-4 tomatoes, sliced about 1/4" thick
    aluminum foil

Directions

Prepare a separate foil package for each 2 pieces of salmon) Tear two pieces of foil large enough to wrap around the salmon sith some overlap. Place those foil pieces one on top of the other. Put about 1 tsp of basil pesto on the foil and then place the salmon filet on top. Spread each piece of salmon with anothe 1 tsp of basil pesto. Arrange sliced tomatoes over the pest so they cover the top of the salmon. Wrap salmon securely in foil (doubling over the seam and ends several times). Place salmon packets on a heated baking sheet and cook 15 minutes. Remove from over after 15 minutes and let sit 2-3 minutes. Open carefully and serve immediately (while the salmon and tomatoes are still hot.
