"Waldorf" Salad

Ingredients

1 chicken breast
olive oil for chicken
salt and pepper
Seedless red grapes, 100 grams
Celery, one medium rib
Granny Smith apple (one half used)
Chopped walnuts , 15 grams
4 large servings mixed baby salad greens
2 t. olive oil
2 t. dijon mustard
1 t. balsamic vinegar
Directions
This salad was inspired by one that I had at a restaurant, but I've significantly cut the calories here.
Grill or bake chicken breast with a coating of olive oil and salt and pepper. Let stand 5 minutes, then slice into thin pieces. Chill.
In a medium bowl, toss together:
Chilled sliced chicken
Grapes, cut into halves
Diced celery
Chopped walnuts
Half apple, peeled and diced
Generous servings of mixed salad greens
In small bowl, mix oil, vinegar and mustard well.
Toss dressing over mix in bowl. Serves two.
**Feel free to adjust amounts of anything listed here. Add extra protein from the chicken, good fats from the walnuts, or extra fruits and celery. The nutrition facts are based on the proportions listed. Crumbled blue cheese would also be a good addition.
