Introduction

Number of Servings: 2

Ingredients

    3 beets
    1.5 sweet potatoes
    1 small onion
    garlic powder
    salt
    pepper
    olive oil

Directions

Preheat oven to 400 degrees. Peel and cube beets. Toss with 1 tbsp olive oil and place in a single layer on foiled baking sheet. Bake for 15 minutes.

While beets are cooking, peel and cube sweet potato. Toss with 2 tbsp olive oil, garlic powder, salt, and pepper. Add to beets on baking sheet. Cook 25 additional minutes.
