Ingredients

    2 15-oz cans pumpkin puree
    2 large apples, peeled, cored and chopped
    2 tsp. cinnamon
    1/2 tsp. nutmeg
    2 tsp. vanilla extract
    2 Tbsp. So Delicious« Dairy Free Unsweetened Coconut Milk or Almond Plus Almond Milk
    1/4 cup stevia
    32 oz. So Delicious« Dairy-Free Plain Greek Style Cultured Coconut Milk
    1 3/4 cups granola

Directions

Place apples in a food processor; pulse until smooth. Transfer to a large bowl. Add pumpkin, cinnamon, nutmeg, vanilla, coconut or almond milk and stevia. Mix well to combine.

Layer pumpkin mixture and yogurt into 12 glasses. Sprinkle with granola and serve.

    It was fabulous!!! I substituted 1 cup dried oatmeal mixed with 2 Tablespoons buttery spray, 3 pqckets stevia & 1/4 cup raisin/dried cranberry mixture instead of granola. It was fabulous - 4/20/13

  • Correction needed on the yogurt, I think. The ingredients list 32 ox. So Delicious Dairy-Free Plain Greek Style Cultured Coconut Milk

    I'm assuming that is the yogurt? I don't know the brand, so I'm not sure. I'm not sure how everyone else was able to make the recipe and rate it. - 4/20/13

    This recipe looks fabulious but stevia and I don't get along! It makes feel REALLY thirsty even after I've drank 12+ cups of water. However I think that by using the stevia is what allows this recipe to have so few calories. I don't know what I could substitute the stevia with to keep the calo. . - 4/20/13
