Creamy Broccoli and Spinach soup (from RealSimple)Submitted by: INGMARIE
IntroductionI used olive oil in place of butter
1/2 cup fatfree greek yogurt instead of sour cream I used olive oil in place of butter
1/2 cup fatfree greek yogurt instead of sour cream
1 leek chopped
1 cup chopped onion or a 2nd leek chopped
1 tbsp olive oil
6 cups natural chicken broth no salt added
1 broccoli bunch, chopped
1 small potato peeled and chipped
5 oz fresh spinach
1 garlic clove , crushed
salt and pepper to taste.
.5 cup fat free yogurt.
Add the broth , broccoli and potato.simmer until tender ,about 20 minutes.
Stir in the spinach until wilted.Transfer to a blender
and puree' until smooth.
top with yogurt before serving
Serving Size: makes 4 servings @ 2 cups or 6 as a side or 1st course
