Introduction

This is a slow simmer soup you can start throw in the crock pot the morning before work and it will be ready when you get home. Delicious, serve with cornbread. Number of Servings: 8

Ingredients

    1 cup Organic Zucchini, chopped
    2 cups Organic Broccoli, chopped
    1 medium Red Bell pepper chopped
    2 medium Carrots, chopped
    2 stalks Celery, chopped
    less than an 1/8th cup fresh ginger, minced
    1 1.2 lbs Red Potatoes, chopped
    1 baby Bok CHoy, chopped
    1 smal Onion chopped
    4 cups Chicken Broth
    2-3 cups Water
    3/4 TBL Basil
    3 cloves Garlic, chopped


Directions

Chop all the veggies and toss into your slow cooker. Set on low for 4 to 6 hours and enjoy.
