Pumpkin Energy Bites



Introduction

Small energy bites that can be carried as a tasty snack. Small energy bites that can be carried as a tasty snack.
Number of Servings: 1

Ingredients

    16 finely chopped dates
    1/4 cup Pumpkin puree
    1/4 cup Honey (pure natural)
    1 tbsp Flax seeds or chia seeds
    1 tsp Ground Cinnamon
    1/2 tsp Ground Ginger
    1/4 tsp Ground Nutmeg
    Pinch Salt
    1 cup dry uncooked Oats
    1 cup toasted Coconut flakes
    1 cup toasted Pumpkin seeds

Tips

If preferred, line an 8x8 glass baking pan with parchment paper and cut into 24 squares once cooled.


Directions

Combine first 8 ingredients in a food processor until smooth and combined.

In a large bowl, mix oats, coconut and pumpkin seeds, then add the remaining ingredients.

Cover and place in refridgerator for an hour.

Using a spoon or cookie scoop, shape mixture into small energy balls of about 1 inch in diameter

Serving Size: Makes 2 dozen bites
