Introduction

Delicious, creamy soup that tastes like it should be more calories! Delicious, creamy soup that tastes like it should be more calories!
Number of Servings: 9

Ingredients

    Small Zuchhini - 2
    corn starch 1/8 cup
    1% milk 2 cups
    fresh spinach 2 cups
    Onion - 1 large
    Garlic - 2 cloves crushed then finely chopped
    Salt and Pepper to taste
    Chicken Stock (or broth) - 16 oz
    Optional: red pepper flakes, cayenne pepper, or hot sauce 1 tsp
    Optional: 1/4 cup fresh cilantro, chopped (for a nice summer-outdoor-picnic flavor)

Directions

Peel the zucchini and shred. Sautee the onions in a large pot with olive oil and a pinch of salt. Add the garlic and sautee over medium until onions are translucent. Add the stock,veggies, seasonings. Bring to a boil and reduce heat to low or medium. Let simmer for at least 30 min. Put in the blender to chop up the spinach and veggies to make it creamy, at this point combimine corn starch with about 1/2 c of the milk and mix well stir into heated veg stock mix that is placed back in pot,stir slowly add the rest of milk and heat till thickened.
