veggie pasta sauce

Introduction

loaded with veggies! loaded with veggies!
Number of Servings: 8

Ingredients

    1 tblsp. olive oil
    1 medium onion, diced
    1 cup green pepper, chopped
    1 cup red pepper, chopped
    8 medium mushrooms, sliced
    1 tsp. each: pepper, sugar, oregano, parsley
    1/2 tsp. seasoned salt
    1/2 cup red wine
    1 jar spaghetti sauce (no meat)

Tips

you can add zucchini and/or eggplant to sauce for even more veggie flavor!


Directions

heat olive oil in saucepan. add all vegetables and stir until coated with oil. Let cook on medium low for about 5 minutes. Add seasonings and cook 5 minutes more. Add wine and bring to boil. cook down, uncovered, until liquid starts to get thicker. Add spaghetti sauce and turn heat to low. Cover and simmer 30 minutes, stirring halfway through cooking time.

Serving Size: makes 8 1/2-cup servings
