Juniors Cheese Cake

Ingredients

    1/2 cup cake flour
    1 tsp baking powder.
    pinch of salt
    3 eggs separated
    1/3 cup sugar
    2 tbsp sugar
    1 tsp vanilla
    3 drops lemon extract
    3 tbsp butter melted
    1/4 tsp cream of tartar
    4 8oz cream cheeses room temperature
    1 2/3 cup sugar
    1/4 cup cornstarch
    1 tbsp vanilla
    2 large eggs
    3/4 cup heavy whipping cream

Directions

Sift cake flour, baking powder, pinch of salt
Separate eggs. Mix egg yolk & 1/3 cup sugar. Add vanilla and lemon extract. Add melted butter. In separate bowl whisk egg whites and cream of tartar, slowly add 2 tbsp sugar. Add flour mixture to egg yolk mix and then gradually add whisked egg whites. Pour into greased springform pan. Bake at 350 for 10 minutes.
Watch closely.
Cream 1 package of creamcheese 1/3 cup sugar and cornstarch. Once mixed well add rest of cream cheese & sugar. Add vanilla. Once mixed well beat in egg one at a time. Mix heavy cream until just mixed. Spoon gently into pan. Bake in water bath for 1 hour at 350. Cool for 2 hours then store in fridge
