Ingredients

1 large zucchini (250 grams)
1/4 cup low fat cheddar cheese
1/2 cup mozzarella cheese
1 cup pasta sauce
2 cups fresh spinach
Tips
Directions
1. Slice zucchini into thin slices.
2. Spread zucchini slices evenly into layers in a loaf pan. Cover each layer with pasta sauce and a combination of both the cheddar and mozzarella cheeses. Add spinach into the middle layer.
3. Place pan in the oven at 350 degrees for 45-60 minutes. Cool and serve.
